Egg/Soy/Dairy/Gluten Free Mushroom Quiches

Ingredients:

1 onion, diced

1 large zucchini, peeled and shredded

Small can of mushrooms

1 T oil

6 T Just Egg

2 T Bobs 1-1 Gluten free flour

Salt and pepper to taste

 

Directions:

Saute onion and zucchini in oil for at least 10 minutes until onions are translucent. Add mushrooms and saute another 5 minutes. Mix in Just Egg, flour, salt and pepper to taste. Bake in cupcake holders or ramekins at 350 for 20-25 minutes.
