Egg-Free Honey Cookies - White Spelt Flour
*No refined sugar, no eggs, soft*
*Ingredients (about 20 cookies):*
- 100g soft butter OR 1/2 cup oil
- 1/3 cup honey (110g)
- 1/4 cup milk / oat milk / water (60ml)
- 1 tsp vanilla
- 220g white spelt flour (1 3/4 cups)
- 1 tsp cinnamon
- 1/2 tsp baking soda
- pinch salt
*Instructions:*
*1. Mix wet:*
In a bowl, whisk together oil/butter, honey, milk, and vanilla until smooth.
*2. Add dry:*
Add the white spelt flour, cinnamon, baking soda, and salt. Stir with a spoon until you get a soft, slightly sticky dough. Don't knead too much.
*3. Chill:*
If dough is very sticky, put in fridge for 20 minutes. This makes it easier to roll.
*4. Shape:*
With wet hands, make small balls (size of a walnut). Place on baking paper and flatten a little with your palm. Leave space between.
*5. Bake:*
Bake at 175°C / 350°F on middle rack for *10-11 minutes only*. They will look pale and soft — that's right. They get firm as they cool.
*6. Cool:*
Let cool 10 minutes on the tray before moving.
Keep in a closed box 3 days, stays soft. Freezes great.
