Dough Ingredients (adapted from oreo cheesecake donuts recipe in The Voice of Lakewood):
1 cup warm oat or rice milk
1 T yeast
2 T oil
1 T sugar
3/4 t salt
2 1/2 cups flour
Combine yeast, milk, oil, and sugar and let sit for 5 minutes. Knead in flour and salt until smooth dough is formed. Cover and let rise for half an hour. Roll out dough 1/4" thick and cut out circles of dough. Cover and let rise another 10 minutes. Heat up 3-4 cups of oil and fry donuts about 30 seconds on each side. Donuts should puff up.
Transfer to wire rack to cool.
Fill donuts with custard* and top with chocolate glaze, or jelly and dust with confectioners sugar.
For chocolate glaze: Mix up ingredients for glaze until smooth. Smear over donuts and allow to harden for an hour or two.
*Bakers Choice custard is both egg and soy free.
Glaze:
1 lb confectioners sugar
1/2 cup cocoa
1 t vanilla
2-3 T oil
6 T whip
Mix well and smear over donuts.
