Painted Sugar Cookies (Gluten & Egg Free)

Thank you Bruchi for giving us this adorable idea on how to make this chanukah cookie. 

 

Ingredients for cookie:

1 Stick Vegan butter

1 Cup light brown sugar

2 oz apple sauce (half of small container)

3/4 tsp vanilla extract

2 Cups Bob's 1-1 gluten free four

 

Directions:

Cream butter and brown sugar (easier by hand)

Add applesauce and vanilla and beat until fluffy. Add flour and salt and mix until fully combined. Roll out dough to 1/4-inch thickness and cut into desired shapes. Refrigerate for 30 minutes (if possible, not necessary).

Preheat oven to 350 and bake for 14 minutes. Decorate when cooled.

 

Icing:

Option 1) Confectioners sugar, water and oil 

Option 2) 1 Tbsp corn syrup, confectioners sugar and water
