Quinoa Banana Muffin - Nut, Egg & Potato Free

Ingredients:

Just under 1/2 cup quinoa plus 1/2 cup arrowroot (this quinoa/arrowroot combination is the replacements for 1 cup of flour which is usually used)
1/4 cup brown or white sugar
2 ripe bananas mashed
3 Tbsp olive oil
1/4 cup apple juice
1/4 cup seltzer
1.5 tsp baking soda

Mash the bananas first and mix in the rest of ingredients, batter will be runny/liquidy
Bake at 350 for 20 mins
Yields 12 muffins
