Egg, Nut, & Potato Free Chocolate Cake

California Gourmet Fudgy Brownies

Adapted to be egg and potato free

Ingredients:

In place of 3 eggs use : 3/4 cup seltzer, 3 tsp olive oil, 4 oz starch (15 Tbsp), 1 tsp. baking soda and 1 tsp either lemon juice or vinegar. If you can use baking powder then do 1 tsp. baking powder instead of the baking soda and omit the lemon juice/vinegar.

1 1/2 cups sugar

3/4 cup oil

3/4 cup potato starch/tapioca starch/ or mix arrowroot and coconut flour

1 cup cocoa powder

½ tsp salt

1 ½ cups chocolate chips

 

Preheat oven to 350 degrees. Line 9x13 with parchment paper.

Whisk eggs, sugar and oil together.

Mix starch/flours, cocoa powder and salt. Add all together.

Stir in the chocolate chips.

Bake for 25-30 minutes.
