Ingredients:
6 1/2 cups water
4 1/2 T yeast
Proofed with 2 T sugar
1 1/2-2 c sugar
1 c oil
2 T salt
About 5 lb. of Flour until you get right consistency.
(You can use 5-6 c white whole wheat before slowly adding regular or bread flour)
Directions:
Put the yeast, warm water and 2 T of sugar to bubble. Add oil, salt, rest of sugar. Slowly add flour until good consistency. Rise 30-40 min, form into loaves, allow to rise another 30-40 min. Glaze with your choice of egg free options. Bake at 325 for about 40 min for average size of loaves.
Below are other ideas what to use in case you can’t brush the top with eggs:
1) Spray with Pam or brush with oil.
2) Honey mixed with a little hot water and put it on top of challah.
3) Maple syrup, the real kind. You can use an egg brush to brush it on or brush with some sugar water so the seeds stick.
