Carrot muffins with cream cheese frosting (pareve)

1 1/4 cups Bobs 1:1 Gluten free flour

1 cup sugar

1 tsp baking powder

1/2 tsp baking powder

1 tsp cinnamon

1/2 cup oil

1/2 cup applesauce

2 medium carrots peeled and grated

 

Frosting:

4 oz whip cream

4 oz. Wayfare cream cheese

3/4 cup confectioner's sugar

 

Directions:

Preheat oven to 350. Mix together dry ingredients. Add in applesauce and oil and mix untill smooth. Mix in grated carrots untll  combined. Pour into muffin tins and bake for 25-30 minutes until toothpick is clean.

 

Frosting directions:

Beat whip until peaks form. Mix in cream cheese and confectioner's sugar and mix until smooth. Frost muffins once cool.
