Egg Free & GF Vanilla Cupcakes

Mix 3/4 cup vanilla oat milk with 1 tsp apple cider vinegar and let it sit. 

Whip 1/2 cup vegan butter with 3/4 cup sugar and then add in the following:

1.5 tsp baking powder

1/4 tsp salt

1 tsp vanilla

1 1/4 c + 2 Tbs grain free flour *

1 1/4 tsp xanthan gum

Add in the milk mixture

 

Poor into muffin tins. This usually makes 12 cupcakes

Bake for 25 min on 350

 

 

*Home made grain free all purpose flour (this can be used in most recipes as a 1:1 ration substitute for flour)

2 C. Oat flour

2 C. Sorghum flour 

1 1/4 C. Arrowroot starch

3/4 C. Tapioca Starch

 

Mix and store in airtight container
