Egg free breakfast pancakes/waffles

Breakfast Pancakes

Ingredients:

2 cups flour
4 tsp baking powder
½ tsp salt
3 Tbsp sugar
1 cup rice milk or water
1 cup plain seltzer
3 Tbsp oil
¼ tsp vanilla extract

Prepare some oil to use for frying. Mix all ingredients in large bowl adding seltzer last. Scrape all
flour stuck to bottom of the bowl. Heat a minute amount of oil in a small skillet on low flame. Only pour
enough batter to cover the diameter of the pan. When edge of pancake turns brown, flip pancake to the
other side, and fry until golden. Repeat with remaining batter. Pancakes and batter may be frozen or
refrigerated. Serve with pancake syrup. For a healthy alternative, substitute 1 cup of flour with 1 cup of
whole – wheat pastry flour.
