Gluten & Egg free coffee cookies

Ingredients:

1/2 c sugar

1/2 brown sugar

1/3 cup oil

1 tsp baking powder mixed into 2 Tbsp water or 3 Tbsp chickpea brine (this is egg sub)

1 1/2 cups Gluten free flour

1 Tbsp  coffee dissolved in 1 tablespoon boiling water

1 tsp baking soda

1/4 tsp salt.

Mix well and add in handful of white or  Semi sweet Enjoy life chocolate chips

Bake at 350 for 12min.

 

Glaze:

1 Tbs coffee dissolve in 1 Tbs boiling water. Then add

1-2 cups confectioners sugar and mix untill smooth . Drizzle over cookies.
