Gluten & Egg Free Funfetti cake/cupcakes

Ingredients:

2 1/3 Bobs gluten free 1-1 flour

1 1/2  cup of sugar 

1 Tbsp baking powder

Pinch salt

1/2 cup + 2 Tbsp oil

1 1/2 tsp vanilla extract

1 cup soy or rice milk

 2 Eggs or 6 Tbsp

of chickpea brine or 4 oz apple sauce 

1/4 - 3/4 cup Allergy friendly sprinkles

 

Direction:

Preheat oven to 350. Grease a 9 x 13 inch baking pan or cupcake holders. Add dry ingredients, mix to combine. Add wet ingredients, mix to combine untill batter is mostly smooth. Fold in sprinkles. Bake for 35 minutes, untill center is firm and a toothpick inserted comes out clean.
