Stained Glass Cookies

 

Ingredients for cookies:

2 fake eggs*

1/2 cup sugar

1Tbsp honey

1/2 cup oil

1/8 tsp vanilla

1 3/4 cups spelt flour** or 1 5/8 of Bobs 1 to 1 Gluten free flour

1/2 tsp baking powder

 

Directions:

Mix the first five ingredients together. Then add the flour and baking powder.

Refrigerate dough. Roll out and shape.

 

*Fake eggs 

You can use Ener-G egg replacer

or mix together 3 Tbs of oil, 3 Tbs water, and 2 tsp baking powder

or use 6 Tbs of pareve milk

 

**Spelt flour

You might need a little more or a little less than 1 3/4 cups depending on how fine the flour is. Each company is different.

Someone else tried making these cookies with Authentic foods gluten free flour. It came out good but the gluten free flours are more delicate to work with.

 

Stained Glass Part:

Roll out the dough on a parchment paper. Use cookies cutters to cut out shapes and then use a smaller cookie cutter to shape the inside and then take out the dough from the center hole. Fill it with crushed candy. The candy expands so don't  put too much.

Bake until the candy melts and sets inside.
