Egg & Gluten Free Chocolate Babka

Ingredients:

4 cups Bob's 1:1 gluten free flour

2 cups sugar

1 cup oil

2 T vanilla sugar

1 cup rice milk

2 t baking powder dissolved in 3 T water

1/2 cup applesauce

4 t baking powder

1 t cinnamon

pinch of salt

 

Chocolate Filling:

1 cup cocoa

1/3 cup oil

1/2 cup boiling water

3 cups confectioners sugar.

 

Mix together flour, sugar, oil, and vanilla sugar to form coarse crumbs. Set aside 1 1/2 cups for topping. Add milk, baking powder, applesauce, cinnamon and salt and mix well.

 

Separately mix together chocolate filling until smooth.

 

In pan, layer cake, then chocolate filling, and top with crumbs. Bake at 350 for 50-55 minutes.

 

Makes 1 9x13, or 3 medium loaf pans.

*It grows a lot so do not fill pans more than two-thirds full.
