Gluten & Egg Free Potato Knishes

Ingredients:

8 large potatoes

4  small diced onion

1/2 cup potato starch

1 cup oil (1/2 for sauteing and 1/2 to add in later)

salt and pepper to taste

Directions:

*Boil and mash the potatoes

Saute the diced onion. Once it's golden brown, pour it into the mashed potatoes. Add rest of the oil, salt, pepper, and potato starch.

Once it becomes a dough, shape it into round balls using this ice cream scooper. then use your hand to flatten a bit. Spray olive oil on top. Bake on 350 for 45 minutes to 1hr.

*easier way to make mashed potatoes is peel the potatoes cut them into 3 and put it into aluminum pan. Cover with water and little salt put it into oven on 400 for 1.5 hours 

this can be frozen unbaked just spray with oil on top and pop in the oven frozen
